That is why we call it a theory and not the "law of evolution".

Not in science. Theories do not become laws. A scientific theory is the current best explanation for a phenomena. In the case of evolution, the evidence is voluminous. So much to be nearly unassailable.

The way I was taught is that what use (nineteenth century and before) to be called "natural laws" are now called theories and what use to be called "facts" are now called data. Of course the old vocabulary still persists but it has problems -- the idea of a natural law, for example, naturally implies a natural lawgiver -- and no end of mental mischief stems from this.
