When I've been to the US for the second time back in 2003, I ate this delicious fried chicken.
I have never quite understood how it is made - and I have tried to duplicate it here in Israel for several of occasions.
Anyhow, I have not thought about it for about 2 years, untill last night I saw "Taken", by Steven Spielberg. It was the second episode, and being that it happened mostly in Texas, fried chicken was the main food everyone ate (together with mash potatos and corn).
I now can't think of anything else but making a good, but simple, fried chicken like it is made in the south of the US.

I know I can just go to a KFC nearby, but it just doesn't taste the same.

So, this is a call for all of you southerners, to boast your southern legacy and reveal to the common Israeli how you make a simple, real southern fried chicken! original.gif

Does the one you make at home as non healthy as the one they sell on KFC? a friend of mine who is concened about health issues told me she would agree to eat one if I make it, but said she doesn't think it's any healthier than your average junk food KFC. So anyways to convince her it's healthier? wink2.gif

kfc has always seemed greasy to me. I'm not much of a cook, but it tastes better at home.

...but, I will tell you the healthiest method that I know and adapted on my own.

It's really very simple...of course wash the chicken. Forgive me, I don't measure things... but put a couple of cups of flour, salt and pepper to taste in a plastic or paper bag along with the chicken and shake, coating chicken well. Heat oil to 400 degrees and deep fry until golden brown. The inside will not be done frying it that quickly so put it in a preheated 250 degree oven as you take it out and put on a rack so the oil will drip off. Every fifteen minutes or so turn chicken and blot with paper towel to remove grease, for about an hour. Be sure and not put too much chicken in the oil at one time because it lowers the temperature and it will be very greasy.

The quicker, fattier way is to deep fry at 350 degrees until golden brown and done inside. Hint: when it's done it floats. It can be cooked in a skillet with about and inch of oil, but that makes it greasier in my opinion and the sides don't get crispy.

depends... if you want a deep fried chicken, a pressure cooker is best for the job. thumbsup.gif

beyond that, I dont know much. perhaps a Cajun seasoning would help. its great on Chicken,Steaks,ect...

EDIT: asked my mother about this matter and she pointed me out to a recipie from one of her cookbooks.

prep. 25 minutes

Chill:8 hours

Fry: about 30 minutes

3 quarts water

1 tablespoon salt

1 ( 2 1/2 to 3 pound broiler-fryer, cut up)

1 teaspoon salt

1 teaspoon pepper

1 cup all-purpose flour

2 cups vegetable oil

Combine water and 1 tablespoon salt; add chicken. cover and chill for 8 hours. Drain chicken ; rinse with cold water, and pat dry.


Combine 1 teaspoon salt and pepper; Sprinkle half of pepper mixture over chicken. Combine remaining pepper mixture and flour in a large freezer bag. Place 2 peices of chicken in bag; seal. Shake to evenly coat. Remove chicken, and repeat procedure with remaining chicken, 2 peices at a time.


Put Oil in a 12 inch Skillet or chicken fryer; heat oil to 360 degree's (Farenheit). Add chicken, a few peices at a time, skin-side down. Cover and cook 6 minutes; uncover and cook 9 minutes. Turn chicken pieces; cover and cook 6 minutes. Uncover and cook 5 to 9 minutes, turning pieces during the last 3 minutes for even browning, reccomended to drain eccess oil off of chicken by laying fried pieces of chicken on paper towels.

and I again personally reccommend adding Cajun seasoning to the chicken after it is fried.

you will probably have to covert some measurments to the Metric system but, I hope this helps.

What about chickens used does that matter?

Some of the chickens here are pumbed full of steriods and growth hormones they cannot even stand on their own feet. I don't know about Isreal but I noticed outside the U.S. chickens are usaully grown naturally in most parts of the world.

Oh Honey Honey Honey! We had Fried Chicken Dinner today!
Fried Chicken Boneless Breast filets, Mashed potatoes, mixed Veggies, Cornbread, Iced Tea with lemon...all homemade of course.

My daughter is the cook (since 8 yrs old) I can cook, it's just SHE LOVES TO COOK hahaha

She uses Boneless Chicken Breast filets. At our Supermarkets, it's already cut for the customers but you can use any cut, okay.

The supermarket sells breadcrumbs but you can also make this yourself using day-old bread and assorted spices. (mix your spices in the breadcrumbs)
She has one platter with breadcrumbs, another platter with flour and another platter with raw chicken.
The spices she uses is this: Salt, Black Pepper, Paprika, Onion, Garlic (All in powder form or purchase McCormick Original Chicken Seasoning)
Then she coats the raw chicken in bread crumbs and then in flour.
Use olive oil to fry 7 minutes on each side with medium heat until golden brown.

My daughter makes "Whipped Potatoes" because she doesn't like lumps of potatoes... and with this she uses 6 to 7 large potatoes peeled and broiled soft. Then she adds a little milk, butter and salt & pepper mmmm so yummie. She wanted you to know that white gravy is made with Milk. In Texas, we use a brand called, Pioneer, for all gravies, biscuits and pancake recipes. Biscuits are flour rolls and pancakes are like crepes but thicker served with maple syrup.

At our home, I am my daughter's assistant. I prepare all of the ingredients for the Artist hahaha.

We make everything from fresh meats and produce because processed foods are loaded with harmful ingredients. So my daughter's food never raises my blood sugar readings.

BTW, she makes an awesome grilled Steak too w/ coarse salt, black pepper and red pepper freshly grounded mmmmmmmmmm so good!

I like to eat my daughter's chicken with mexican homemade tortilla's; corn or flour. BTW, I read the other post and cooking the chicken longer than 7 minutes on each side with give you drrrrrrrrry chicken. Chicken, Pork, Beef, Turkey, Fish etc. doesn't need to be cooked to death haha.
