Well I agree with you on Star fox as the last couple of games haven`t exactly been the greatest games going around and certainly didn`t provide me with the enjoyment I got from earlier iterations.
Sonic I have never really bothered to play but from reviews of recent games it does sound like going back to basics may just be in order.
With Star Fox the more recent games have been focusing on characters more, which I don't like. The original SF was mostly an arcade-like game, and only had the characters talking during missions. Also, I don't like how they have other non-arwing missions. These missions usually just hurt the pace of the game and take the attention away from the flying.
Sonic 2 is still the best out of all the sonic games, in my opinion. Sonic Adventure 2 is good, but nothing special. Like SF, they've been adding more useless characters and adding different types of levels. I'm all for different levels and areas, but Sonic is about running. In SA2, there were levels where you control Tails or Eggman in big mechs, and levels with Knuckles and Rouge where you do a "hot and cold" sort of game trying to find emeralds. These parts are slow and very annoying. Sonic needs to be fast.
I also think it would be nice to see Mario be more traditional, espescially after all of these spin-offs and Sunshine.
I'm not really saying that all of these should go back and remake the original games, but I want the companies to make games that are true to the essence of the series. Sonic need to run fast, Mario needs to destroy Bowser's castles, Star Fox needs to fly his Arwing, etc.
