its just sound which vibrates and creates a wave along the surface and therefore creating patterns?
i would think so at least notice how the salt seems to be jumping/hopping around

I guess without the walls it wouldnt work. Maybe it has something to do with how the wave lengths bounce and when it has a serten frequency the waves will match each other making some parts of the table vibrate less and other more.
Just my guess on how it works.

I would guess that the salt lines are the locations of what are known as standing waves, which as another poster already guessed fairly well, are formed under certain cirumstances when a wave and its reflection meet, causing a wave that appears to be static.
