If they'd stop messing around with things that ain't broke, the world would be a lot better place. It has antiseptic qualities which help to keep the bee hive free of harmful bacteria and parasites thus ensuring a safe growing environment for the larvae which feed on the sweet part. Hydrogen peroxide is a strong oxidising agent, acting as a bleach at high concentrations (hence the peroxide blondes of yesteryear). Presumably, the modification to honey which is claimed to make it more medically effective is nothing more than increasing the peroxide concentration. Bees normally carry nectar to the hive and repeatedly regurgitate it until it has (a) fermented into glucose sugars and saccharides and ( evaporated off most of its water content - that is the honey-making ritual, pure and simple. So modification of the ingredients would likely have more to do with the bees' behaviour or by augmenting the finished honey with additives.
