I made a copycat version of Olive Garden's Chicken Gnocchi Soup last night.    Really good!!

i also made something similar to this not to long ago, it was amazing and great for a fall day!!

tonight was chili again, i made it with fire roasted jalapenos and a tomato habanero mixture so it had a really nice heat to it that was not overpowering. My preference is to have a thick and hearty chili so mine is not tomato based, just one can of tomatoes goes into it. Instead I do a refried bean base that lends to the thickness of the chili, this go around i also used some pork chorizo i found in my freezer, i really liked this addition and hope to find more of it at Aldis.

I have a boneless pork loin in my freezer I'm considering turning into chili, or maybe some other Tex-Mex dish.

going to do chicken wraps tomorrow with the leftover cooked chicken thighs from tonight's dinner. the days following will be stroganoff, grilled stuffed burritos, and a cheesy italian noodle dish

I used this boneless loin to make a mushroom, onion and bacon roulade.

I went to the Laguna casino with my daughter on Sunday for breakfast but we got there later than usual so we had the frito pie at their snack bar and it cost 2 dollars more in a smaller bowl than the one at the Sandia pueblo casino.   The chile wasn't fresh either.    So, when we go  to Laguna we will eat at the sports bar or Laguna burger from now on.   If you are ever driving on I-40 west of Albuquerque and you are hungry I recommend Laguna burger inside the casiono or the Sports Bar.   Both have good food.   Before Covid they had a great buffett, but they still have not opened that again.   The space is still there so we are hoping they will open it eventually (the other casinos got ride of their buffett spaces and put in more games).

Just looking at the menu. Hmm the burger has Green Chile, interesting.
