i got home from work at 930, I ate dinner, having coffee now then its off to the kitchen to make tomorrow's dinner. Pork stew with roasted veggies.

i use either a pork loin of country style ribs and cube into bite sized pieces... I brown this in my Dutch oven with a mixture of olive oil and real butter, then let it simmer until well tender (may have to add water to keep from scorching the pot) when the meat is cooked to your liking add 4 beef bouillon cubes.

cube potatoes, skin and all, rinse well with hot water then strain. Mix with seasonings of your choice (i use seasoning salt, lots of pepper, onion powder, garlic power) then toss in olive oil.... roast in oven on 425 for at least an hour and 15 minutes or until your meat is cooked. toss occasionally while in oven. 

empty bag of baby carrots into an oven worthy dish toss with seasoning salt, pepper and olive oil. roast in oven with potatoes until tender (usually about 45 minutes)

in a small pot melt 1 tablespoon of butter and add one drained can of cut green beans, season with pepper and salt and toss in the butter. simmer on med low for 15 minutes

be careful on the salt, it is easy to overdo it

once everything is cooked toss with the meat and wallah, no need to simmer it any longer. roasting the veggies before hand adding allows the flavor palate of each veggie to come through rather than everything tasting the same.

sliced english cucumbers goes great with a fresh dill and greek yogurt dip

Ended up having steak and the fixings tonight for supper.   Here's the finished product, the salad was in a separate bowl.

i ended up canning the remaining stew and ended up with three quart jars and a pint jar

this week's menu is

spaghetti and salad

BBQ pork bites, broccoli, three cheese potatoes

scrambled eggs, bacon, sausage, homefries

jambalya

hamburgers and french fries

I'm not sure this post fits here as its not whats for dinner yet but one day it will be,. BUT

I canned the leftover stew and got 3 quarts and 1 pint to put into food storage I also canned 6.5 pounds of hamburger which gave me 3 quarts for food storage. I am running out of room in my kitchen for the canned portion of my food storage. I am considering putting shelves in my hall closet and using that as additional storage as I plan on continuing adding to it.
