Well the noodles were not a hit.  Perhaps it was the recipe I used.   It actually gave me a stomach ache for the rest of the evening.   So that will be shelved and another recipe tried at a later date.

What exactly is "peanut noodles" ?

Wheat, rice flour or millet, mung bean noodles in peanut sauce/gravy?

Chillies have to be well cooked through too and left to separate from the oils... Or just lightly blanched if not just plain raw... 

Too heavy a portion of peanuts at a go is rather hard on the digestion, especially if it's not well cooked evenly...

tonight was salad loaded up with fresh veggies. english cucumbers are absolutely wonderful. I will be making a creamy cucumber and onion salad to use up the rest of the cucumber and red onion that I have left

tomorrow will be ham, pinto beans, and cabbage. My son will have a piece of fried cornbread. I am looking forward to the cabbage as it gives me a healthy serving of diabetic friendly food

The recipe called for ground chicken, yellow and red curry, chicken broth, dark soy sauce, coconut milk, peanut butter and ramen noodles.   It was just not a good combination in my opinion.   I should have made my own peanut sauce, perhaps that would have helped.

Supper tonight is not for the faint of heart, homemade chicken gnocchi soup with fresh baby spinach, thick pieces of fresh italian bread slathered in butter, fresh fruit.

blood sugar levels are still giving me fits even though i dropped  my daily carb intake to 40grams, thats with no sugar intake as well. So this week I am not doing full on meals, I will be cutting out all starch intake. I will be surviving on eggs and avocados in the morning, nuts in the afternoons then i have the following to pick from for dinners. shrimp, grilled chicken, salad, brussel sprouts, mashed cauliflower, a variety of veggies and spinach dip, olives, hummus, cheese, lean meats, cottage cheese. i sure hope this helps bring my numbers down, if it doesnt its insulin for me.

What are your numbers? Have you had an a1c and fasting insulin test yet? Are you on any medication that could be causing resting blood glucose to be high? What time of day are you checking it?
