Must be the night for pork.   I made pork tenderloin with baby gold potatoes, carrots and onion.   Cooked them in an iron skillet.

Keeping the budget down this week so I can purchase more items for food storage. I decided on three meals each one will last me two nights.

Chicken broccoli Alfredo

Chicken enchiladas, rice and beans

A casserole we simply call rice, cheese, and meat.

I have a carry over meal from last week, breakfast.

I am adding 3pounds of burger, carrots and butter to my food storage this week. Next week I am focusing on dehydrating fruits and vegetables.

this was not my dinner but one i cooked for my elderly client and her son. she is 98 and he is 70. I made them lasagna and garlic bread. i put it in the oven as I was leaving so wll find out tomorrow how they lked it.

Made 2 pizza casseroles last night, took one over to my neighbor, whose wife is in the hospital, recovering after surgery.   We had a tossed salad and garlic bread along with it.   Pretty good stuff!

This year I intend to come to grips with Greek food, as I hear it is good for dieting without feeling hard done by.  Tonight I am making a souvlaki.
