It's hard to go wrong with Loren Coleman. He's not a committed believer *or* a committed debunker, and he's been in the scene as long as I've been in the world. He has a museum devoted to the field too. Bob Curran wrote a few fun books about varied monsters that were quite enjoyable. Do you want general or specific books? Jeff Meldrum would be a good source for Bigfoot information, and Linda Godfrey would be a good source for "werewolves". Brad Steiger wrote at least one jam-packed book about cryptozoology, and Nick Redfern covered the subject too. The books out there range from fantasy to history.

Just an idea, try writing your own.

Reading what other have come up is all well and good, but finding your own path is usually the best.

....and no, it won't be an easy trek.

Meldrum is a good source for information. He takes the right approach to the study of Bigfoot, as well as other cryptids that are like him. Coleman and other cryptozoologists wrote books or chapters on the creatures on your list. You also could use the search engine at Amazon.com.

Going to have to back Rafterman on this one and agree that Ben Radford is a must read if you are looking for someone who analyzes claims of the paranormal/crypto world and then applies scientific method to evaluate the plausibility of the claims.

I would also recommend any readings you can find that analyze the psychology behind human belief, because this area of study is closely linked to why we as humans tend to be pre-disposed to believe in things despite lack of evidence to support them. Understanding this phenomenon will give you a good basis to work from when reading of eyewitness encounters of supposedly paranormal things.
