Why do we start sentences with 'so' ?

We use it without thinking, but why do we add 'so' to the beginning of sentences ?

I notice that I often start sentences with 'so' or 'well'. I don't know why some people get their knickers in a knot about it! :D

I think so and well used before a spoken sentence is used to get the other person's attention before you make your statement.

Yeah, I think it happens because a lot of people type how they would talk. 

I do it, too, but I mostly use "well."
