Mars astronauts could grow "kitchen garden"

Salad and vegetables could be grown on board the first spacecraft to carry humans to Mars.
Storing enough food to sustain the crew on a voyage to Mars that could last years is just one of the hurdles that scientists need to find an answer to before such a journey can become a reality. Growing low-maintenance crops on board the ship could provide the astronauts with fresh food and even help to replenish the air supply by changing carbon dioxide in to oxygen.
Experts say the crops would not only give crews healthy food to eat during the long journey to the red planet, but would also improve the atmosphere onboard by producing oxygen and removing carbon dioxide. In addition, the plants suggested as suitable by a NASA scientist would require minimal tending and not take up much room on spacecraft.

[ The 10 “prime candidates” are lettuce, spinach, carrots, tomatoes, spring onions, radishes, peppers, strawberries, herbs and cabbage. ] Feed the Crew to much of these items and they will be producing their own Methane gas as well. And they think the space suits smell now!

"Unmanned spacecraft full of supplies including long-lasting food could also be sent to Mars before astronauts set off, so they would have something to eat when they arrived." What an incredible advertising coup for McDonald's! There, on Solar system wide TV, would be a supply craft with the Golden Arches emblazoned on it and plenty of those year and a half old burgers still looking like the day they were made and probably tasting just the same!

The real answer here is Algae, and Fish. Algae (many edible strains) can be cultured very quickly, and in addition to feeding astronauts, it also feeds fish. There you have it, a closed ecosystem of flora and fauna, ready for dining and able to be packed into a tiny container!

There you have it, a closed ecosystem of flora and fauna, ready for dining and able to be packed into a tiny container! The problem with that is that water gets pretty weird in a zero-gravity environment. I'm not sure if any proper scientific tests have been done with fish in zero-gravity, but I imagine there would be complications.
