Lab develops ice-cream made from flowers

Fraunhofer Labs has come up with a healthier type of ice-cream made from lupin flowers.
The new variety contains no dairy, gluten, animal fats or protein and is on sale in German supermarkets as a healthy alternative to conventional ice-creams. It isn't the first time scientists have tried to produce food from lupins either, in the 1990s the same thing was attempted albeit without much success.
“Lupinesse,” as it’s called, is derived from the seeds of the blue sweet lupin, known in this country as lupine. They flower as tall, thin rods — Texas bluebonnet is a lupine, for instance.

So fat free, now they just need to make it sugar free "Too bad it has just as much fat as regular ice cream", SO what is the point, why not use milk?

It has just as much fat and probably just as much sugar as real ice cream. If I'm gonna splurge, I'll take real ice cream, TYVM!

Good for those who no longer ingest cows milk, like lactose intolerants, evolved vegans, and the entire country of Japan Sounds yummy!

Lactose free diary products already exist. You can get lactose free milk for example. It's just treated with bacteria that break down the sugar into simpler forms. The treated milk actually tastes sweeter due to how the simpler sugars have a stronger sweetness...er..index? They just taste sweeter. The real benefit to this process is the elimination of the cow in ice cream production. When growing cows becomes infeasible due a lack of space and workable farmland, then when we go on a vegetarian/vegan diet then these processes will allow us to continue having cake despite eating the first long a... How is this "healthier"? If they have the same amount of fat, their point is moot.

The protein also has cholesterol-regulating effects, he said.Plant-based ice creams are obviously not a new idea — there are several types of soy, coconut and nut-based ice creams on the market, targeted for vegans and people with lactose intolerance. But this one is valuable because the plant protein has additional health benefits
